From the Labs of LSHTM to the Kitchens of Kavos

Penny Andrea, MSc Applied Molecular Biology of Infectious Diseases 1994, talks about what she has done since she left the School…

“My time at the London School of Hygiene & Tropical Medicine was a time in my life I will never forget, and for this reason I encourage my four boys to study and reap the wisdom the Greek school system has to offer.

After receiving my BSC in Biology at King’s College, I went on to the London School of Hygiene and Tropical Medicine where I completed a MSc in Applied Molecular Biology in Tropical Diseases.

Me and my Men

I stayed on voluntarily with my research tutor and funded my transport expenses by working nights at a restaurant. Eventually a post was available for HIV research using a MVA (Modified Virus Ankara) delivery system. Six months later we were given an extension to our MRC grant – a three year PhD/research assistant’s position at the William Dunn School of Pathology, Oxford University.

Life after the School has been a series of adventures, a roller coaster ride.

I took myself off to the prestigious labs of Oxford where I spent a year and managed to publish a paper together with Tom Blanchard (Journal of General Virology 1998, 79, 1159–1167).  Content with my achievement, to follow was a complete turn in my life, I met my husband and was literary swept off my feet and settled down on the island of Corfu in Greece.  This was to be where I would spend to date my life together with my four boys and run two successful restaurants “Penny’s Kitchen” and “The Tex Mex” on the southern most point of the island, the infamous Kavos resort.

This year is to be a new adventure a with our hotel complex near the sea – “Mediterranean Blue” . This inspirational hotel is perfectly situated just steps from the beach and in easy reach of all the area has to offer.

There is also a children’s pool offered onsite for those that have smaller kids. The building is situated just 800 metres from a selection of shops, cafes and bars. The area also boasts a number of historical and religious monuments along with Corfu’s largest waterpark.
